Pink Chicken

Not really sure why my brother and I called this "pink" chicken, but that's what we always called it. To be fair, if you mix enough paprika and Bisquick, the breading does look a bit pinkish.

NOTE:

• I now use 8 oz. Cool Whip instead of beating the cream as mentioned above, and the results are still yummy
• if you use the pre-formed oreo cookie pie crust you can save time, and then you only need 8-10 oreos for the top. 
• You don't need to freeze for 24 hours, it's fine after 12 hours. 
• You can use mint extract instead of the Creme de Menthe, use about 1/2 tsp. 
• We add a few drops of green food coloring for fun.
